What it is

Miso soup is dashi stock seasoned with fermented soybean paste (miso), with tofu, wakame seaweed and scallion. It anchors the traditional ichiju-sansai meal — 'one soup, three sides' with rice — the template of Japanese home cooking.

What it means

More than a soup, it's a daily ritual of nourishment and balance, different in every region and household. To understand washoku is to start with this bowl.

For special diets

Usually made with fish dashi — ask for a kombu-based version to keep it vegan. Some miso contains barley (not gluten-free).
